Jambu is a plant native to the Brazilian Amazon, widely used in the traditional cuisine of the northern region of the country. It is appreciated for its characteristic flavor and its local anesthetic effect, due to the presence of spilanthol, a chemical substance capable of causing a numbing sensation upon contact with mucous membranes. Because of this substance, jambu is also used for infusing beverages and preparing cosmetics, and is known outside of Brazil with several related patents.
To infuse 1 liter of cachaça, 25g of dried jambu is needed, aged for 2 weeks.
